Bill Lumsden, director of whisky creation for such labels as Glenmorangie and Ardbeg, likes to play around with wood. That's how he came up with his latest creation as well as its name. It won't be on the market until September, but I was fortunate to get an advance sample.

This will be Ardbeg's annual new release when it hits the global market in the fall. The name alone is sure to create some interest.

The Islay non chill-filtered single malt is aged in new, severely charred -- thus the "alligator-ing" effect -- new American white oak barrel. The resulting product is blended with "regular" Ardbeg 10 Year Old, then aged another year in refill casks before being bottled at 51.2% alcohol by volume (102.4 proof).

It has all the deep smokiness of Ardbeg 10 in the initial nose but with additional elements -- tangy barbecue sauce, cocoa, and a hint of ginger. The taste broadens to include even more leather and smoke, making one long for some spicy food to complement it (see my adventure with "chili and 'gator"). The finish is long, smooth and with a hint of sweet chocolate at the end.

Don't go scrambling to your local spirits shop just yet, though. Ardberg Alligator won't be on the market until September.

George Washington's Aged Rye Whiskey

The rebuilt distillery at George Washington's home in Mount Vernon, VA, had its grand opening in 2007. Since then, everything distillers have made there has been a hit. For the most part, the uniqueness of the operation has created the demand for its output among collectors. And that was unaged whiskey, the same way it was sold in Washington's day when he was the young nation's top distiller.

It will be interesting to see how fast the 2-year-old George Washington Aged Rye Whiskey will go when the limited edition goes on sale at Mount Vernon on October 22.

The first such bottles, Nos. 1 and 1, went for $12,000 at auction Wednesday night during the anual gala there sponsored by the Distilled Spirits Council of the United States (DISCUS). The event raised a total of $214,000 for Mount Vernon.

I was fortunate to have a sampling of the aged rye earlier in the day. A distinctive nose, with virtually no alcoholic heat, enticed me to quickly go further. This is a nice rye, not yet in the class of a Michter's or a Sazerac, but made nicely under master distiller Dave Pickerell, formerly of Maker's Mark and now consultant to numerous micro-distillers.

The tang of the rye base is evident, and notes of citrus, leather and perhaps a touch of cardamom are layered, a pleasant surprise from such a relatively young spirit. A tip of the hat to Pickerell and company, working with the only operating 18th Century-style equipment in the nation.

Retail Price: Better get yourself or a surrogate to Mount Vernon early on opening sales day. Just 300 limited-edition bottles will be sold for $185 each beginning at 10 a.m. that Saturday. Proceeds will go toward upkeep and operation of the Mount Vernon Estate, Museum & Gardens.

Troy & Sons Moonshine

Troy & Sons has something unusual going for it. Troy. As in Troy Ball, a female distiller in a world heavily dominated by men. When I lunched with her at the Mount Vernon Inn in Virginia recently, she insisted her moonshine would be the best I ever tried. Here's what happened.
I examined the bottle. Elegant, classic lines, understated yet bold at the same time. I sniffed the moonshine, ready to pull back quickly as one often must do with such young spirits. Hmmm. No need to. It's pleasant, with a whiff of corn.

I tasted. Right off the bat, something was missing. The acrid taste of your everyday 'shine, which this certainly is not.

Ball's moonshine is made 100% from corn, but not just any corn. Crooked Creek Corn, a white grain Ball says once was grown in North Carolina and Tennessee, but now only in NC, fortunately near her home. She buys hers from the McEntire farm where it has been cultivated for more than 120 years.

Ball experimented with various recipes acquired from the North Carolina State Archives and from residents of Madison to McDowell counties who had a history of home cooking. Her final product, arrived at on August 18, 2010, not only has rounded edges, a slightly floral nose and rich, smooth taste, it also does not linger overly long in the soft tissues of the mouth as so many moonshines of lesser character. It is, as Ball promised, the best 'shine I've ever tried.

Woodford Master's Collection Rare Ryes

For its sixth annual release in its Master's Collection, Woodford Reserve has created a change of pace with a pair of 375ml bottles of rye -- one aged in a used, charred cask, the other in new wood.
Woodford master distiller Chris Morris hates being predictable. Thus, the "Rare Rye" version of his Master's Collection, to be released sometime in November.

The two are a triple distilled rye bottled at 92.4 proof. I obtained samples of both and evaluate them side-by-side, as Morris suggests doing.

The New Cask Rye has an enticing aroma, heavy on the brown sugar caramel with a hint of spice. On the tongue, both elements expand to go along with a noticeable heat one might expect from being matured in new wood. The finish is lingering, spicy and smooth.

The Aged Cask Rye has, surprisingly, a much more restrained nose and lighter color -- both more of a lemon honey than the pale brown and brown sugar, respectively, of its companion. On the tongue, there is a distinct tarry edge before the semi-sweet chocolate, thyme and burnt sugar notes kick in. A long finish, smooth to the very end.

To be frank, I'm not wild about the execution of either, but like elements of both.

Vintage Cocktails with Australian Bartender Magazine

It's been a while since my last post, I've been totally flat out and I've finally got a few minutes up my sleeve before my next shoot.
I did the latest Australian Bartender Magazine shoot with the magazine's drinks Editor Simon McGoram.
Simon has been scouring second hand bookshops and the internet to come up with some great vintage cocktails from times past, the images & recipes will be in the next issue of the Mag.

And keeping with the vintage theme we also shot barman Sam, from Gardels Bar at Porteno (pictured) skillfully pouring his cocktail creation.

Hi All,

As some of you might already I recently spent a couple of glorious weeks in sunny Tonga. A small group of islands in the South Pacific that is pretty close to paradise.

Instead of a big party my dear friend Peta wanted to Travel to Tonga to celebrate her 40th birthday, she didn't have to twist my arm too much when she asked if we would like to come with her. In the end there was a group of nine including my two young neices who traveled over to relax and celebrate.

Unfortunately while I was there my lens started playing up half way into the trip, but I still managed to get a few good holiday snaps.

I definately recommend Tonga as a travel destination if you like something rustic and relaxed, nothing too flash. The people are really nice and it's happy & safe for kiddies.

The seats are still up on the bar but Tom & I were allowed in pior to the opening to shoot some  great cocktails on location at "The Wild Rover" yesterday. This great little watering hole on Campbell Street in Surry Hills whose opening is much anticipated should be in operation by October. This location will also be one of the bars that will be visited by Sydney Bar tours when it finally opens it's doors.
Great atmosphere and cool decor from the people that brought you the much acclaimed Grandma's Bar on Clarence Street.

Spicy Sweet Potato Breakfast Casserole

So this morning I decided to try a new breakfast recipe. I got my lightbulb idea from: http://www.health-bent.com/pork/paleo-breakfast-casserole. I changed a few things but not a whole lot.

Ingredients I used:
8 Eggs 
1 Large Sweet Potato, Peeled and Cubed
16 oz. Italian Hot Sausage (You can use the Original as well. I wanted some more SPICE in my life so I used HOT)
4 oz. Green Chopped Chilies
Shredded Cheese (Optional - I did not use)



Place your sausage into your skillet and brown (just like you would with hamburger). When that is ALMOST done place in your sweet potatoes to soak in all the grease. Cook until tender which took about 10 minutes. Mean while you can get your casserole dish (9x9) and add your eggs, and green chilies and beat together. Set aside. Go back to your sausage mixture and check on it. When it was done I took TONS of paper towels to soak up the remainder of the grease because there was so much and I am not a huge fan of grease NOR heart attacks. If you like grease and want it in your dish, by all means you can leave it. It's a personal choice. However, as a warning I ended up used a good 1/4 of the roll just on soaking up the orange grease. Slowly add the sausage mixture into the egg mixture (slowly so you don't cook the eggs from the heat the meat is giving off), stirring constantly. Now here comes the part when you can sit down and enjoy your morning joe. Bake it for 30-35 minutes in a preheated 350 oven. It may or may not take that long just keep an eye on it. I had to put aluminum foil on top about 15 minutes in because the top was browning to much.  You'll know when its done when the eggs are cooked all the way through. Take the casserole dish out and serve with cheese if you prefer. I left mine out. You may be wondering how spicy this dish turned out and actually its just a very tiny kick. The sweet balances out the spicy very well. Bon appetite and GOOD MORNING to you. This dish is beyond de-lish!




The Cave Man's Pulled Pork

HUGE SHOCK ALERT! My hubs made dinner tonight. I honestly have to say this is the second dinner he has ever made since the history of us that doesn't have to do with breakfast food. On a mission, he made the easiest slow cooker pulled pork. It came out moist with a little kick to it. De-lish!


Here's the Man-cipe:
1/8 teaspoon chipotle powder1/4 teaspoon garlic salt1/2 teaspoon coriander3/4 teaspoon sea salt1 teaspoon cumin1 Tablespoon chili powder1 teaspoon onion powderDash of pepper
2 lb pork roast or tenderloin (no need to remove the extra fat it causes more flavor)
1 onion (nothing pretty just chopped)Cut up your onion and place in the bottom of the slow cooker. Mix all your dry ingredients together in a bowl then add to your pork by giving it a deep massage. Get aggressive...its ok go ahead! Place that on top of the onions. No need to add any liquids (the pork and onions produce just enough liquid) Cook on low for about 5 hours. Its ready when the pork shreds easily. Shred it up and place back in the slow cooker to soak up the juices. Then serve it up when your ready. This shredded pork tastes amazing with some homestyle coleslaw. Happy eating!

So today was kinda a big deal for me. I got to meet and mingle with a lot of higher ups and co-workers that my husband works with. I had two meetings of the day and the second one was particularly the main focus. It was a potluck and our portion of the company got to make desserts. YUM YUM my favorite! Time to get my game face on and figure out what to make. I seriously sat there for over an hour wondering what would be easy but a de-lish dish. I literally LOLed at the name, then my mind thought about how tonight's conversation might go:

"Who brought these awesome brownies and what are they called?""Sir, that would be me and they are called *cough* SLUTTY BROWNIES *cough*"
What an icebreaker right? Yea thats me. The quirky one. Anyways, they were a HUGE hit and I got a few high fives tonight. Yes! I saved face big time by not screwing up and bring a lame traditional dish. All jokes aside if you need a quick, easy and huge hit try these puppies out. You can't go wrong. I was able to make enough brownies to fit in a 9.5x13.5x2" pyrex dish with enough to fix in a 6 cup pyrex baking dish. Time for this mama to go to bed. It's been a long day. Hi all! Sorry it has been so long since my last post. I have been beyond busy again being a super mommy/wife/taxi service/cook/maid. *Sigh* with that being said I have this new found determination to start trying my recipes that I have collected since High School. I have so many its rediculous. So every week (most likely on Wednesdays) I will have a new recipe (mainly the sweet treats) from my collection so be sure to come back and check them out. I will even post my FAILS haha Im sure there may be some. Guess who will be my guinea pig? Yep...the hubs.

I love this recipe because you can create your own recipe with this basic recipe. Play around with it. Use milk chocolate, dark chocolate, color your white chocolate, use different flavor combos BE CREATIVE.  I do have to warn you that these will be gone in no time flat. You want proof? See the picture below? Yea that one is not mine (close but not mine) because by the time I got around to snapping the picture for this blog the hubs had devoured so many of them I threw my hands up and said SUCCESS! This wife is proud I can make my hubs belly happy! So here's the recipe:

CHEESECAKE POPS3 packages cream cheese, softened (I used the 1/3 less fat one)1 cup sugar1 cup sour cream (I used the reduced fat kind)1 teaspoon vanilla extract3 eggs, beaten,1 cup graham cracker crumbs30 oz. white chocolate chipsToppings: Pretty much anything you like but here is some ideas - Grated coconut, grated chocolate, assorted sprinkles, ground nuts, etc etc.45 lollipop sticks
Line the bottom of a 9" spring form pan with parchment paper. Make sure the parchment paper. Coat the paper and sides of pan with cooking spray. In a large bowl, beat cream cheese and sugar until smooth. Beat in sour cream and vanilla until blended. Add eggs beating on low speed until just combined. Pour into prepared pan.
Place pan on a baking sheet and bake at 350 for 45 minutes or until center is almost set. Cool on a wire rack for 10 minutes.  Carefully run a knife around edge of pan to loosen. Cool for another hour. Cover and freeze overnight.
Remove from the freezer and let stand for 30 minutes. Place the crumbs in a ziploc bag. Working quickly scoop out 1" balls of cheesecake. Toss the balls into the ziploc bag and shake until your hearts content. *shake shake shake- shake shake shake* Sorry I was doing a little cha cha cha song in my head while making these so I had to include the song hahah! 


ANYWAYS...back to the recipe. When you coated the cheesecake balls, insert lollipop stick. Place on waxed lined baking sheets. Freeze for an hour until firm.


In a microwave safe bowl, melt the chocolate until smooth. Dip pops into melted chocolate. You will have to work quickly because white chocolate does not like to heat up again. Allow excess to drip off then roll into desired toppings. It does not need to be perfect. Trust me. The flavor and texture of these pops are to die for and you can make them pretty-full with the colors and different flavor combinations. 


Let stand until set. Store in an airtight container in the refrigerator (IF there is any left!).

Valentine's is in the air

I decided to send both my daughter and my hubs off to school and work tomorrow with some sweet treats in hand to celebrate Valentine's day. I of course found some amazing ideas on pinterest so I wanted to blog about my experiences with each recipe/craft.


Lets start off with the M&M Samoa Blondies found here:

These were super easy to make and DELECTABLE! I followed the recipe to the T. And the only issue that I had (maybe because it's my love hate relationship with my Korean oven) was that the tops of the M&M's burnt a little so I had to take the one's on the top off. Hence why no picture of my own (they did not turn out as pretty as these). I would suggest if you do bake these to put some foil over the top so they don't burn. This is also an easy recipe to have the kiddos help with. So out of 10 I give this recipe a 9. This is a keeper in my recipe stach :)

This recipe was super easy. I put the white chocolate chips in the microwave (just keep an eye on them so they don't over cook) and then stirred in the strawberry icing and placed in an 8x8" pan that had parchment paper placed inside. EASY EASY. This recipe is also from the site as well because I don't like how my fudge did not hold up. This recipe is a bit of a mess so I would suggest 'lil eyes can watch just not touch. As far as suggestions go with the recipe: Put the fudge in the freezer for a fair amount of time before you cut into them. It breaks really easy and when you handle it for to long (even with it being in the freezer before hand) it starts to get sticky. So how do I rate this? Well, I am not a huge fan of strawberry icing so I was not keen on the taste. The texture was also a bit off for fudge. It was too soft and creamy. Just think in between icing and fudge. However, I am a fan of how quick and easy it was. I will be making this again BUT next time I may try milk chocolate chips and the german chocolate icing, or white chocolate chips with dark chocolate icing. The ideas and flavors are ENDLESS with this recipe so this too will be a keeper (just not the strawberry one). I give this a 7 out of 10.

I love bear hugs and so does my daughter. This year we decided together that the above link was appropriate for this valentine's exchange for her class. I tried to keep the whole idea of what the link did but I did feel that Gummi Bears and Teddy Grahams were to much "bear" and not enough "hugs" so I kept the Teddy Grahams and ditched the Gummi Bears (sorry hope no hard feelings lil bears) So what did this mama do? I threw in some hershey hugs. So there you got it you have "BEAR HUGS". I am actually really happy with how it came out. I don't think the picture to the right does it justice. And your probably wondering how does a coffee mug fit into the equation of bear hugs. That is for her teacher. It is a coffee mug that has a top on it and I CRAMMED that puppy full of Chocolates. On her label it reads "You're A Sweet Treat". I really like how I coordinated the little treat baggies and the coffee mug. Honestly, that was not on purpose I grabbed these items at two different occasions. Oh well I am totally NOT complaining. So this idea for me deserves a 10 out of 10. Why? Well, what kid is not going to like chocolate and teddy grahams?

Easy Baked Chicken Taquito's

So Delicious!
As so many of my recipes these days, I found this amazingly simple recipe for Chicken Taquitos.  The hardest part of this recipe was shredding chicken.  I made the taquitos fresh to be eaten that night, but you can freeze the recipe in case you have a party, or a large group of people you are trying to feed later on.  Or if you simply want to make a double batch and save half for later.  I also made some simple changes to my recipe since I cant have any cows milk products, I will also post my version of the recipe after the original.  All the pictures throughout I took during my cooking process.  And at the bottom I added TIPS & HINTS so make sure to read those!


Original Recipe

Ingredients:
Not everything in the "original" recipe is pictured,  I changed things up a bit as posted at the end.


3 ounces cream cheese, softened
1/4 cup green salsa
1 Tbsp fresh lime juice (juice from half a lime)
1/2 tsp ground cumin
1 tsp chili powder
1/2 tsp onion powder
2 cloves garlic, minced
3 Tbsp chopped cilantro
2 Tbsp sliced green onions
2 cups shredded cooked chicken
1 cup shredded Mexican flavored cheese
small flour or corn tortillas
kosher salt
cooking sprayPreheat your oven to 425˚F. Line a baking sheet with parchment paper.In a large bowl, mix the cream cheese, salsa, lime juice, ground cumin, chili powder, onion powder and garlic. 
In this picture I used goats cheese instead of cream cheese.  As you can see looks very much the same and tastes close to the same too.  Also I added juice of a whole lime for a better taste.  I also omitted the Onion powder because we simply did not have any on hand.


Once combined, stir in the cilantro and green onions. Add the chicken and cheese; mix thoroughly.
The mixture was very creamy and held together well.  I added extra cilantro and a few extra green onions since I omitted onion powder.  I didn't measure my ingredients, and this was a recipe that was VERY easy to eyeball.

(If you decided to prep this in advance, refrigerate the mixture at this point until ready to continue.)Working with a few tortillas at a time, heat them in the microwave between two paper towels until they are soft enough to roll (about 20 – 30 seconds).Spoon 2-3 Tablespoons of the chicken mixture onto the lower third of a tortilla. Roll the tortilla as tightly as you can.
Rolling the tortillas was easy and fast!  My tortillas were fresh so I didn't microwave them as in the previous step.

Place the rolled tortilla seam side down on the baking sheet. Repeat with remaining tortillas until the mixture is gone.  Make sure the taquitos are not touching each other. Spray the tops lightly with cooking spray and sprinkle with kosher salt.
My recipe made 20 taquitos using the small enchilada and taco flour tortillas.   Im assuming in the original recipe she used burrito size tortillas.  Also corn tortillas would work fine and add more flavor, but we do not have a decent selection here!

Bake for 15 – 20 minutes or until crisp and golden.Serve with salsa, sour cream or guacamole.AND THE FINAL PRODUCT AGAIN
I ate about 3 or 4 while my husband ate about 6 or 7.  Very filling, the inside is warm and gooey while the outside is crisp!

**To freeze:  Before baking, flash freeze the taquitos in a single layer on a baking sheet then place in a labeled freezer bag and store up to 3 months.  To bake a frozen taquito (no need to thaw first): Preheat oven to 425˚F and bake for 20 minutes

So what kind of changes did I make to this recipe?  


1. Instead of cream cheese, and regular cheese I used goats cheese, about a half a pound, or about 7-8 ounces.  I Let it soften on the counter and once it was soft, it was the same consistency as cream cheese, and has the same texture, and close to the same taste.  Now in the states they have Soy Cream cheese (tofutti) and they have an array of different goat cheeses from cheddar, to dutch, to mozz.  In korea I am limited to the Chevre but found it can be used in most cases.  


2.  I used double the lime, extra cilantro, and extra onion, and omitted the onion powder because there was none on hand.  


3.  I used taco/enchilada size flour tortillas which resulted in more, smaller taquitos.  If I had delicious corn tortillas,  I would use those instead.


TIPS AND HINTS


I started with raw chicken, threw them in a pot, covered with water and boiled on the stove until no longer pink in the center.  I used 4 small chicken breasts.  I then shredded with two forks.


I used the chunky green salsa, not the thinner green salsa.  


I was worried that the inside wouldn't be gooey and warm and the outside wouldn't be crisp like a fried taquito, but it was!  I baked mine for 20 minutes WITHOUT turning them.


I served with Jalepenos, Tapatio, salsa.  Also I added spanish rice and Beans to make this more of a meal and less of an appetizer.
